Dominic Fortin Joins Sonora Resort as Pastry Chef for 2018
Sonora Island, BC, April 23, 2018 – Relais & Chateâux wilderness retreat Sonora Resort is set to welcome a familiar face back to the kitchen this season. Acclaimed pastry chef Dominic Fortin previously worked at the resort in 2011 and is excited to make his return starting this May. He joins Sonora Resort’s talented team to helm the Tyee Dining Room alongside executive chef Lukas Gurtner.
“Sonora Resort is one of those timeless places that you always remember,” says Fortin, who was the executive pastry chef at Whistler’s Bearfoot Bistro for six years. “Although I’ve thoroughly enjoyed my time at Bearfoot, I wanted a change. When Lukas informed me the pastry chef position was available, I jumped at the chance to once again create unique desserts for guests against the stunning backdrop of nature that is British Columbia.”
As one of Canada’s top pastry chefs, Fortin is also one of only 100 Cacao Barry ambassadors worldwide. Born in Quebec, he trained in his hometown of Quebec City before moving west to complete his pastry apprenticeship at Vancouver Island’s Sooke Harbour House, where he learned to utilize seasonal and local ingredients, something that has continued with him throughout his career. Fortin is known for his creativity and unusual flavour combinations. He is constantly looking for new and innovative techniques in pastry and often plays with texture, shapes, and contrast.
“A meal’s final course is just as important as the whole meal,” adds Donna James, general manager at Sonora Resort. “It sets that lasting tone for a diner and Dominic certainly brings a fresh and adventurous approach to dessert. I have previously worked with Dominic and can say without a doubt that he is extremely passionate about his craft, which are visually stunning and delectable at the same time.”
